Overview

 
"Viognier" is a difficult word to pronounce, and probably why a lot of people are unfamiliar with this wine. Viognier is a major grape in the Rhone region of France, and is still relatively rare in California. 
 
Lychee, Peaches, Pears, Apricots, aromas of flowers and citrus - this wine reminds us of all the above. It is crisp and refreshing. The body is medium to full. 

The 2016 growing season started early with bud- break and fruit- set ahead of previous years with relatively even temperatures throughout the summer. Harvest was two weeks earlier than 2015 but crop yield in the vineyard was lower than expected. To make up for less grapes than expected, the natural acid levels were perfect and the quality of the fruit was excellent.  

The wine was fermented in stainless steel at a low temperature to maximize the fruity aromas and flavors. No oak, no barrels, and no malolactic fermentation was used in making this wine. In fact, very little intervention by the winemaker was needed to bring maximum flavor and quality to this wine.

  • 100% stainless steel, whole- berry press, three day post- press settling, cold 23 day fermentation with X16 yeast.

  • 14.4% ABV - pH 3.3 - TA 6.81 g/L - RS 0.1 g/L
