Overview

Trio is our proprietary blended red wine. It's not "leftover" wine casually thrown together, but is deliberately and carefully crafted from vine to bottle. The wine is medium to full-bodied with well-integrated tannins. The aromas in the glass are of sweet cherries with hints of chocolate, cloves and spices. The taste is complex and layered.

The Cabernet Sauvignon lends racy acidity and structure to the wine along with bright notes of currant and cherries while the Syrah adds deeper flavor layers of dark plum and blueberry. The Petite Sirah contributes a profound bass note of licorice and spice.

This is a "mountain-grown" wine; the Cabernet vineyard is at 2,800' and the Syrah is at 1,800' elevation. Each varietal is created and aged separately, then blended just prior to bottling. The exact blend varies each year but always comes out to about six parts Cabernet Sauvignon, four parts Syrah and one part Petite Sirah.

The 2013 growing season in the Sierra Foothills was uniform and consistent, not too hot, not too cold, more or less "normal."

HARVEST

  • September 9, October 12 & October 15, 2013

FERMENTATION

  • Primary fermentation in stainless steel tanks. Yeast strains used: FX10, L2056, D254, twice-daily tank pump over, secondary fermentation finished in the barrel.

ELEVAGE

  • Nineteen months, 30% new hybrid French & American oak (medium toast) 70% neutral barrels.
  • 15.4% ABV, 3.65 pH, 6.4 g/L TA, 1.4 g/L RS
