Overview

This vineyard is situated just north of the San Francisco Bay and the soil is mostly clay and cobblestones. Cool breezes and fog dominate the climate here, resulting in wine with delicate color and singular flavors.

After hand-harvesting, the grapes were destemmed and cold-soaked for four days. Fermentation started spontaneously with indigenous yeast that came in from the vineyard on the grapes.

After a two-week fermentation, the wine was gently pressed and allowed to settle in a tank for two days before being carefully racked into four used French oak barrels and four new French oak barrels from Demptos and Sansaud cooperages; all with medium toast.

After aging for 19 months in the barrel cellar, the wine was carefully filtered and bottled.
